Sake Basics
The origin of Sake can be traced back to fermented rice beverage brought to Japan from China by the third century B.C..
Although Sake is brewed only from rice, it offers a wide variety of tastes like wine. There are supposed to be more than 2,700 breweries all over Japan, and each brewery uses different Sake-brewing rice, Koji mold (yeast), and water (either spring water or filtered water) in its own unique brewing method.
Shochu Basics
Shochu is a popular Japanese distilled spirit made of many different ingredients such as barley, sweet potatoes, rice, buckwheat, brown sugar, and among others.
The most common base ingredients are sweet potatoes, barley, rice, brown sugar, and buckwheat. The flavor of shochu depends on the base ingredient. For example, sweet potato shochu has a round taste with a hint of sweetness, while barley shochu has a mellow sweet taste.
